Background information Restaurant INEO at the Anantara Palazzo Naiadi Rome Hotel was awarded its first Michelin star two years after opening. In the premises of the hotel on Piazza della Repubblica, head chef Heros De Agostinis presents a cuisine that combines European techniques with ingredients from around the world, while remaining firmly rooted in Roman identity. De Agostinis grew up in the Esquilino, one of Rome's most diverse neighbourhoods. His Italian-Eritrean roots and years in international kitchens shape his culinary signature. Among the signature dishes are the Maccheroncini al ferretto: the rustic pasta is cooked in Madeira sauce and served with an Eritrean-inspired beef ragù and 24-month aged Parmigiano Reggiano, a dish that unites the two cultures of his heritage. The experience is rounded off by a team of 35, including the pâtisserie led by Daniele De Santi, the service team under restaurant manager Damiano Verdone, and sommelier Federico Spagnolo, who curates a wine cellar of over 900 labels.
